It's finally done!!!! After hours and hours of work...my homeade tree skirt is FINALLY FINISHED!!! I'm so excited...i did all of it by myself and it was pretty much my first time sewing!! I love it!! And we set christmas up at home on the inside and out! WOOHOO!

OH MY GOSH! TWILIGHT WAS AMAZING LAST NIGHT! I'm so glad that I got to go with my absolute favorite people too! (Mom, Erica, Sam, Mistie, Lynds, Jessie) For all you Twilight freaks who haven't seen it yet...you have got to see it! And for all you who refuse to jump on the bandwagon and read the books...you have no idea what you are missing!!

P.S. Edward in the movie really was awesome in character...I did love him!

weight loss update!!

So I had my third monthly appointment today at my weighloss center...This last month I actually only lost 4 pounds...doesnt sound like much. But my new body composition says something totally different! I actually lost 9 pounds in FAT and gained 5 pounds of MUSCLE (not to mention I lost 5% body fat just last month...)! So what does this mean? I'm getting leaner and more muscular!! This is awesome! So my weight loss to date is 22.5 pounds since I've been on absolute. BUT! Since the start of the year...I've officially lost 30 pounds! DO YOU KNOW WHAT THIS MEANS!! It is the first year ever that I have actually followed through with my new years resolution! (Talk about procrastination...its the end of the year!) LOVE YOU ALL!

Halloween Recap

We had a great time yesterday for Halloween. I was pleasantly surprised at how well Mack did in his costume...(we had a few trial runs that ended in irrational crying..)We went around to a few houses and then to a Trunk or Treat with Nikki and the kids. Mack's costume was a big hit!

Girls Night!

Pretty sure we are HOT!

We had our monthly girls night last night... I sure had a blast! We met Sethrina up in Salt Lake at the Cheesecake Factory for some dinner. It was delish! After that we walked through the mall for a little bit. It's definitely always nice to feel normal and hang out with the girls! Had so much fun guys!! And we all definitely approved of Sethrina's new squeeze that we got to meet!!

A taste of Heaven...

OK so maybe its because I've been dieting for a while, but this looked SOOO yummy to me.

Mississippi Mud Pie

Cake:
1 cup (2 sticks) butter, cut into big chunks
½ cup cocoa
4 eggs, beaten well
1 teaspoon vanilla extract
2 cups sugar
1½ cups all-purpose flour
1/8 teaspoon salt
1 cup chopped pecans or walnuts

Mississippi Mud Frosting:
One 16-ounce box (about 3 2/3 cups) confectioners’ sugar
½ cup cocoa
½ cup (1 stick) butter, melted
½ cup milk or evaporated milk
1 teaspoon vanilla extract
4 cups mini-marshmallows, or 3 cups marshmallows, quartered

Directions:

To make the cake, heat the oven to 350°F. Grease and flour a 13-by-9-inch pan. In a medium saucepan, combine the butter and the cocoa and cook over medium heat, stirring now and then, until the butter is melted and the mixture is well blended, 3 to 4 minutes. Stir in the beaten eggs, vanilla, sugar, flour, salt, and pecans, and beat with a wooden spoon or spatula or with a mixer at low speed until the batter is well combined and smooth, and the flour has disappeared.

Quickly pour the batter into the prepared pan and bake at the 350°F for 20 to 25 minutes, until the cake springs back when touched gently in the center and is beginning to pull away from the sides of the pan.

Prepare the frosting while the cake bakes; so that you will be ready to poor it over the hot cake. In a medium bowl, combine the confectioners’ sugar and the cocoa, and stir to mix them well. Add the melted butter, milk and vanilla, and use a large spoon or mixer at low speed to beat everything together well. Set aside until the cake is done.

Remove the cake from the oven, scatter the marshmallows over the top, and return the cake to the hot oven form about 3 minutes, to soften the marshmallows.

Place the cake, still in the pan, on a wire rack or a folded kitchen towel. Pour the frosting all over the marshmallow-dotted cake, and cool to room temperature. Cut into small squares and serve.

So someone...please try this and then describe to me in details how it tastes :)

OH MY GOSH! Best day ever!! I got tickets to the midnight showing of Twilight!! WOOHOO!! The official countdown begins...1 month officially til it opens!!!!

Weight Loss Update

Hey all!! Just an update on my Road to Skinny!! I went in to weigh in this morning and to my complete surprise, I lost 4.6 pounds this last week!!! This brings my total weight loss to 18 pounds (in 8 weeks)!!!!!!!! Yay for me! I'm about 4 pounds away from how much i weighed when I first met Bradley :) And then the bad news...right after my appointment, Mack threw up all over me :( So we are home...he's sick with the flu, and I'm forced to waste one of the last beautiful days of the year inside. Oh well...this is all part of being a mom!

Mexican Riv Part II

Hey everyone! I'm back...on to part 2 on the vacation! The day after Cabo, we were in Mazatlan. Me, Brad, and Mack took off by ourselves and did a bit of shopping in town. We didn't take any pictures though!! Mack slept the entire time we were off the boat! And then the day after Mazatlan we were in Puerto Vallarta. We went on an hour long horse back ride through the jungle to these awesome waterfalls. Along the way...I saw the most hideous spiders EVER...they were HUGE!

The waterfall was one of the places they shot to movie Predator so there were shrines to Predator everywhere. There was even a man there dressed up as the predator and walking around.

Mack loved the horse back ride so much he even fell asleep.

And while we were at the waterfall, half of our group went on the ziplines, including Bradley.

The last two days of the cruise were very relaxing. We played in the casino, watched a really hilarious comedian, and ate a lot more really great food. The drive home was a bit stressful though...we were in a 15 passanger van with 12 people in it. To make things "better", just as we were entering Death Valley, CA, the tread on one of our back tires came off...scared that crap out of all of us sleeping passangers who thought we were in a wreck when the van started swerving.

Think that was bad? 45 minutes later when we were dead center in Death Valley, our other back tire blew out completely...there was nothing left.

We had a lot of fun overall, probably won't be able to afford another one for a while, but Mack had a blast and it was definitely a nice break from school and work.

Mexican Riviera Part I

Hey Guys! So we had a blast on our trip! We had to drive a 15 passanger van down to Long Beach...it was long and packed in our car! And when we got to LA, our hotel was pretty much in the most ghetto part of town. But we did go to a Dodgers game...tons of fun!

The first day we got on the boat we had to do that stupid muster thing where everyone has to get their life jackets on and go find their assigned life boat...Mack liked wearing his life jacket for just a minute...

Our first at sea day...didn't get to lay out much because if you hadn't noticed...my son is kind of fair skinned...but he did make friends with a little kid at the pool. This kid was definitely friendly...he loved giving Mack hugs...although Mack did not so much like it after a while :)

Then that first at sea day we had the first formal night and got all dressed up for pictures.

Our first port was Cabo San Lucas. We got on a boat and went to the beach. It was pretty laid back and we really enjoyed ourselves. Mack was so hot so he loved getting in the water.

My Road to Skinny Continues!!! And other things too...

So I had my first official appointment today where they did another body composition! I have lost a total of 10 pounds for this last month...8.8 pounds of it was body fat!!! AWESOME! This week has been absolutely crazy...thats what I hate about leaving on vacation. It's almost to stressful the week you leave and the week you come back to even be worth it! plus...traveling with a group of 25 doesn't exactly strike me as relaxing and carefree! Oh well...I'm off to Mexico! We leave tomorrow and won't be back until Sunday the 28th! So I guess I will just enjoy getting an end-of-summer tan! Love you all!!

The Road To Skinny

Just an update...I went in to weigh in this morning, and lost another 1.8 pounds. Doesn't sound like much, but I've lost a total of 7 lbs in 3 weeks so I'm feeling pretty good! Plus I'm back into my normal jeans and officially out of my FAT jeans :) Still got a ways to go, but not a bad start! Plus...ONE WEEK FROM TOMORROW I LEAVE FOR MY CRUISE! See the urgency on my road to skinny? Love everyone!!

Goodbye summer!

So this morning after Bradley left for work, he sent me a text saying he saw snow on the side of the road...so I'd like to officially say...GOODBYE SUMMER! But, we had a great end to the summer! Mack had his first birthday...so we threw a great party! We had his grandparents there, all his aunts and uncles, and a few of our awesome friends! Among the great gifts he got...a basketball hoop, a wagon, a few baseball bats, and many many more awesome toys! Thanks to everyone for loving our son (almost) as much as we do! Now its time to buckle down for school...piano lessons start this week, and I have lots to do...once again! NEVER A REST!

GREAT NEWS!

So I had my first weigh in this morning...after one week on my new awesome diet I have officially lost 5 pounds! But the other greatest benefit that I have felt is a TON of energy...even my mom noticed! I've been going nonstop for the last week and I feel great! Woohoo!

Catching up!

Ok so the last few weeks have been quite busy! So I just wanted to catch up on a few things happening! So here are a few pictures from Erica's Wedding...

Also, Mack had his very first birthday! He is now 1! It's crazy...I don't feel old enough to have a one year old. We haven't done anything for that yet...his party is on Wednesday. So I'll post more pictures about it then! School starts in two days...bummer. This is going to be a hard semester! Also, I started a new diet which I'm very excited about...my mother in law and father in law both lost 40 pounds on this diet! So I'm sure I will keep you all up to date on how much i lose every time I go and weigh in (which is weekly). They said this first week I can lose anywhere from 2-8 pounds! I'm shooting for the 8...I've got a cruise in 4 weeks...what do you expect! OH and yesterday, a little girl at church gave mack a big hug, then turned and bit him really hard on the cheek. This picture doesn't really show how bad it was..but it was bright purple all day!

Mackay Family Reunion Recap!

Ok so we had a ton of fun at the family reunion this year! Same place as always...McCall Idaho which is totally one of my favorite places! It's beautiful there on the lake! Anyway...Brad couldn't come because of course...he was working...like always. It's ok...I'm getting used to family functions without him there! But we had fun nevertheless! Here are a few pictures!

Brads working in Vernal for two weeks...that bites...so i'm going to stay at my moms house because I'm a chicken and still get scared when I'm home alone at night...

Happy Two Year Anniversary!

HAPPY TWO YEAR ANNIVERSARY BRADLEY!! We have had some great times in our two years of marriage! We have started a beautiful family...

we have gone on some GREAT trips like Hawaii, California, Seattle, and our cruises (we are going on our 3rd cruise together in September!)...

and we have bought our adorable little home together. Our two years together have gone by very quickly! I am so greatful for a great marriage, and a beautiful son! Can't wait til we get to year #3!
