I thought I would jump on the BLOGGING TRAIN and start my own blog so I can keep people updated on how my family is doing and what's new in the life of THE BROWNS.
Cake:
1 cup (2 sticks) butter, cut into big chunks
½ cup cocoa
4 eggs, beaten well
1 teaspoon vanilla extract
2 cups sugar
1½ cups all-purpose flour
1/8 teaspoon salt
1 cup chopped pecans or walnuts
Mississippi Mud Frosting:
One 16-ounce box (about 3 2/3 cups) confectioners’ sugar
½ cup cocoa
½ cup (1 stick) butter, melted
½ cup milk or evaporated milk
1 teaspoon vanilla extract
4 cups mini-marshmallows, or 3 cups marshmallows, quartered
To make the cake, heat the oven to 350°F. Grease and flour a 13-by-9-inch pan. In a medium saucepan, combine the butter and the cocoa and cook over medium heat, stirring now and then, until the butter is melted and the mixture is well blended, 3 to 4 minutes. Stir in the beaten eggs, vanilla, sugar, flour, salt, and pecans, and beat with a wooden spoon or spatula or with a mixer at low speed until the batter is well combined and smooth, and the flour has disappeared.
Quickly pour the batter into the prepared pan and bake at the 350°F for 20 to 25 minutes, until the cake springs back when touched gently in the center and is beginning to pull away from the sides of the pan.
Prepare the frosting while the cake bakes; so that you will be ready to poor it over the hot cake. In a medium bowl, combine the confectioners’ sugar and the cocoa, and stir to mix them well. Add the melted butter, milk and vanilla, and use a large spoon or mixer at low speed to beat everything together well. Set aside until the cake is done.
Remove the cake from the oven, scatter the marshmallows over the top, and return the cake to the hot oven form about 3 minutes, to soften the marshmallows.
Place the cake, still in the pan, on a wire rack or a folded kitchen towel. Pour the frosting all over the marshmallow-dotted cake, and cool to room temperature. Cut into small squares and serve.
Hey everyone! I'm back...on to part 2 on the vacation! The day after Cabo, we were in Mazatlan. Me, Brad, and Mack took off by ourselves and did a bit of shopping in town. We didn't take any pictures though!! Mack slept the entire time we were off the boat! And then the day after Mazatlan we were in Puerto Vallarta. We went on an hour long horse back ride through the jungle to these awesome waterfalls. Along the way...I saw the most hideous spiders EVER...they were HUGE!
The waterfall was one of the places they shot to movie Predator so there were shrines to Predator everywhere. There was even a man there dressed up as the predator and walking around.
Mack loved the horse back ride so much he even fell asleep.
And while we were at the waterfall, half of our group went on the ziplines, including Bradley.
The last two days of the cruise were very relaxing. We played in the casino, watched a really hilarious comedian, and ate a lot more really great food. The drive home was a bit stressful though...we were in a 15 passanger van with 12 people in it. To make things "better", just as we were entering Death Valley, CA, the tread on one of our back tires came off...scared that crap out of all of us sleeping passangers who thought we were in a wreck when the van started swerving.
Think that was bad? 45 minutes later when we were dead center in Death Valley, our other back tire blew out completely...there was nothing left.
We had a lot of fun overall, probably won't be able to afford another one for a while, but Mack had a blast and it was definitely a nice break from school and work.
Hey Guys! So we had a blast on our trip! We had to drive a 15 passanger van down to Long Beach...it was long and packed in our car! And when we got to LA, our hotel was pretty much in the most ghetto part of town. But we did go to a Dodgers game...tons of fun!
The first day we got on the boat we had to do that stupid muster thing where everyone has to get their life jackets on and go find their assigned life boat...Mack liked wearing his life jacket for just a minute...
Our first at sea day...didn't get to lay out much because if you hadn't noticed...my son is kind of fair skinned...but he did make friends with a little kid at the pool. This kid was definitely friendly...he loved giving Mack hugs...although Mack did not so much like it after a while :)
Then that first at sea day we had the first formal night and got all dressed up for pictures.
Our first port was Cabo San Lucas. We got on a boat and went to the beach. It was pretty laid back and we really enjoyed ourselves. Mack was so hot so he loved getting in the water.
